Frequently Asked Questions

How often does a restaurant hood need to be cleaned in California?

NFPA 96 sets the schedule by how much and what you cook, not by the calendar alone. Solid-fuel operations such as wood or charcoal grills are inspected monthly. High-volume kitchens — 24-hour operations, charbroiling and wok cooking — are quarterly. Moderate-volume kitchens, which covers most Humboldt restaurants, are semiannual. Low-volume operations such as churches, seasonal kitchens and senior centers are annual. If you are unsure which tier you fall in, call us at 707-442-3229 and we will look at your setup and tell you straight.

What proof do I get that my kitchen exhaust was actually cleaned?

We place a dated compliance sticker on your system before we leave. It records the month and year the system was cleaned, the month and year the next cleaning is due, and states that the exhaust system and all accessible areas were cleaned in compliance with NFPA Code 96. It carries our phone number and is marked “Do Not Remove Per Order of the Fire Department.” When an inspector walks into your kitchen, that sticker is the first thing they look for.

What does “inaccessible areas exist” mean on the sticker?

Some exhaust systems have sections of ductwork that cannot be reached without cutting in additional access panels. Where that is the case, we check the “Inaccessible Areas Exist” box on the sticker rather than implying the whole system was cleaned. It is an honest disclosure your inspector will expect, and it tells you exactly where access panels should be added so the next cleaning can be complete.

Does A-1 clean the whole exhaust system or just the hood?

The whole accessible system. That means the hood and canopy, the filters, the plenum and grease trough, the accessible ductwork, and the exhaust fan including rooftop units. Cleaning only the visible hood leaves grease in the duct run, which is where kitchen fires actually start and spread.

Do you work around our service hours?

Yes. Hood cleaning is done after close or overnight so your kitchen is ready for the next service. We schedule around your operation, not the other way around.

Which Humboldt County areas do you cover for hood cleaning?

Eureka, Arcata, McKinleyville, Fortuna, Trinidad, Ferndale, Scotia and the surrounding North Coast communities. A-1 has been Humboldt-owned since 1995 — no franchise dispatch, no crews driving up from out of the area.
